The Clover Club is a pre-Prohibition classic associated with the Philadelphia club of the same name and became famous for its elegant, almost old-world style. Made with gin, lemon juice, raspberry syrup, and egg white, it is served up with a pale pink body and a foamy top. On the palate it is tart, fruity, silky, and more structured than many guests expect from its delicate appearance. The drink demands a little more technique than a basic sour because foam texture and dilution both matter, so it suits bartenders with beginner-to-intermediate shaking skills who can manage a proper dry shake. It works beautifully before dinner, at receptions, or whenever a softer, visually polished gin drink is wanted. Notes
A proper dry shake is what gives the drink its signature silky cap. Using fresh lemon and a stable raspberry syrup keeps the colour bright and the balance tart rather than jammy.
The Fruit: Fresh, vibrant raspberry leads the palate, providing a sweet-tart punch that cuts through the other ingredients without being overly sugary.
The Spirit: Dry gin provides a botanical, juniper undertone that keeps the cocktail grounded and sophisticated
The Citrus: Fresh lemon juice slices through the sweetness, giving the drink a crisp, refreshing sour finish.
The Texture: Made traditionally with an egg white (or aquafaba for a vegan alternative), the drink is shaken until frothy, resulting in a luxurious, creamy mouthfeel.
